Smoking salmon fillets in less time

Ness GmbH are the only smokehouse manufacturer to have developed with a microwave manufacturer, a system for smoking salmon fillets in a shorter time
For their ongoing development program for customer’s, Ness GmbH recently installed the above equipment into a factory in Europe, where tests are proving it is possible to produce smoked salmon fillets in under 4 ½ hours.
By passing the fillets through a microwave tunnel, this speeds up the curing process, which allows a shorter drying time prior to smoking the product, therefore making the overall process faster.
This new system has also shown so far to either reduce or destroy up to 96% of the Listeria count, thereby enhancing the shelf life of the product, as well as reducing the risk of contamination.
Ness have also developed new air circulation fans, allowing a greater return suction of air flow, which also reduces overall drying and smoking times. As the leader and innovator of dual air flow technology, this means that the horizontal air flow, coupled with vertical return air flow, guarantees perfect and uniform results through every step of the program.
