Flavour from Ghana cocoa bean for new liquor

ADM is launching a cocoa mass made from full body, roasted Ghana cocoa beans. UGNM 1030 is the latest cocoa mass from ADM’s UNICAO brand, designed for use in fine chocolate products to confer a rich chocolate taste

“We're delighted to introduce this new 100% Ghana bean cocoa mass to our highly regarded range. The full roasted variety complements our low and medium roast 100% Ghana bean liquors to create a full spectrum of roasts, allowing manufacturers to choose a flavour profile that is specific to their needs,” comments Grant Belden, trading director, Cocoa mass, Butter and Non-cocoa ingredients, ADM Cocoa.

“The ADM and UNICAO brands both represent the highest quality, which is demonstrated by this new addition to our cocoa mass range.”

The new cocoa mass realizes the full flavour potential of the Ghana cocoa bean to create a cocoa liquor with a rich chocolate flavour that is synonymous with some of the best West African cocoa beans.

Ghana is considered a premium supplier of cocoa beans and the country’s high quality is reflected in this unique cocoa mass. Intensely dark in colour, UGNM 1030 can be used in a wide range of signature chocolates to create the best quality products.

The technical experts at ADM work at the UNICAO cocoa processing facilities in the heart of Ghana’s growing area in Kumasi, as well in Abidjan in Côte d’Ivoire, to produce 100% origin cocoa mass from each country.

In addition to ADM’s line of 100% Ghana bean cocoa mass, the company also offers an evolving range of cocoa liquors from Côte d’Ivoire, including the recently launched UINM 3050, a mild roast 100% Côte d’Ivoire liquor. Bringing even more possibilities for new flavour combinations, UINM 3050 can be used to create indulgent chocolate products suited to both dark and milk chocolate.

In both Ghana and Côte d’Ivoire, ADM supports sustainable cocoa growing practices, as highlighted by the company’s flagship cocoa sustainability programme, Socially and Environmentally Responsible Agricultural Practices (SERAP), which provides training and financial incentives to help cocoa farmers implement sustainable farming practices. With the support of ADM Cocoa, the Ivoirian co-operative COOPAME has recently become the first SERAP co-operative to be certified by the Fairtrade Labeling Organisation.
