BFFF Awards: How Creative Foods & Brakes concocted winning recipe

Specialist producer of dishes, sauces and desserts, Creative Foods developed the highly praised Smoked Haddock and Pea Risotto, which took the Catering Product of the Year accolade at the BFFF Awards in June

Creative Foods designed the award winning recipe in response to a Brakes Fresh Ideas brief for a new fish dish in 2008. It developed five dish options, including two pasta dishes, two risottos and a traditional kedgeree.

The kedgeree had the hallmarks of a winning dish and it was this option which developed into the final product of arboria rice, flakes of smoked haddock, peas, leek and white wine risotto.

Developing a fish dish proved a challenge in itself for Creative Foods, as Christopher Faulkner, sales director said: “At the time we were not developing a huge number of fish products.

“Therefore we had to source quality cooked fish that was commercially viable, and review the factory and technical processes to enable Creative Foods to produce a fish dish of the highest quality.

“The resulting Smoked Haddock and Pea Risotto dish looks, tastes and feels like a freshly made risotto. This is because Creative Foods’ production process is different from mass production – as it has the capability to hand deposit the smoked haddock and peas towards the end of the line. This retains the texture, appearance, colour and flavour of the whole dish.”

Commenting on the winning product, James Armitage, marketing director for Brakes Group added: “To produce a top-end, individually-portioned product with a middle-of-the-range price point required a great deal of sourcing, recipe development and production skill by Creative Foods’ product development team. The end result fitted our brief perfectly and we are delighted to stock a ‘Product of the Year’ award winning dish.”

Creative Foods constantly looks to innovate and adapt its machinery at both its Torquay and Flint factories to cater for new product development. The Torquay factory - which mainly manufactures sponge desserts - is now expanding its capabilities to produce cheesecakes. It is here that Creative Foods also hopes to develop a new and appealing range of summer desserts - using interesting flavour combinations and natural flavourings - over the course of 2011.
