Shaking up the milk industry

Ulrick & Short has launched products to help it respond to retailers' demands for alternatives to modified starches and fats.

This booming market is fast becoming recognised for its nutritional values and to help stimulate this further, Ulrick & Short has developed its Synergie range of functional clean label starches and the Delyte range of fat replacers specifically for use within dairy products.

Produced from a range of crops and available as cook-up and pre-cook powders, these clean ingredients are ideal for catering for the varying styles of dairy products and due to their low pH and high process tolerance, they can withstand thorough pasteurisation processes - from standardising and heat treating to homogenising.

Traditionally, many in the dairy industry have had difficulties in being able to match the multifunctional characteristics of fat with substitutions. However, these exceptional functional ingredients have incomparable binding qualities, are easy to use, provide a silky mouth-feel for superior drinkability and unlike other products on the market, do not compromise on taste or quality.

Where many dairy producers currently use cream to thicken flavoured milk, Synergie ingredients can be used as the perfect additive free thickening agent, which not only improves textures but also helps eliminate the need to use cream or other modified starches that often mask flavours.

Delyte 6 is cost effective and an ideal easy to use fat replacement for a wide range of dairy products, including instant and probiotic yoghurt drinks.

Looking ahead, Ulrick & Short believes that its move into the processed milk market coupled with its success in the dairy desserts sector earlier this year puts the company in an excellent position for when it unveils its dietary focused range of ingredients for slimming products and other nutritional enhancements later in the summer.
